Low-Fat Queso De Ajo from Skimmilk-Coconut Milk Blend
‘Queso de Ajo’ is a fresh soft cheese spiced with garlic developed from a cheaper blend of skimmilk powder and coconut milk. The soft cheese variety is very nutritious and acceptable. It has low fat content (9-10%), 12-13% total protein, and 1.65% salt. The gross composition of skimmilk powder-coconut milk blend approximates that of cow’s milk. The blend is 21% cheaper and has a high potential as cheese milk in the local soft cheese industry.
