Semi-Hard Danish Type Cheese “Elbo” or Loaf Cheese from Carabao’s Milk
Elbo cheese is a semi-hard Danish type cheese made using Carabao’s milk. It is standardized to a casein: fat ratio of 0.8. Starter (mixed culture) was added at a rate of 1% and allowed to ripen till 0.02% increase in acidity was obtained. The general steps in semi-hard cheese manufacture were followed. Sensory evaluations proved that carabao milk can be successfully made into semi-hard cheese similar to cheddar types which all come is imported products.
