Alcoholic Type of Yoghurt

Lambanog or fruit wine, and a coagulating agent can be added to yogurt mix to make it more acceptable to male consumers. The addition of alcoholic drink and rennet increases the firmness of the yogurt. Yogurt with 10% fruit wine has lower fat content, pH and higher lactic acid content. Though acceptability scores decrease with prolonged storage, acceptability and shelf life of alcoholic yogurt with and without rennet at storage temperature (0-8 ºC) remain good for 26 and 23 days, respectively.
