Dehydrated Edible Coconut Meat
Dehydrated edible coconut meat is similar to copra except that it is of food grade. The process consists of shelling the husked coconuts, cutting into halves, washing with top water, blanching in 82-90 ºC for 10 minutes in 2% sulfite solution and drying in the UPLB Copra Dryer for 25-35 hours. The product is stable even for one year storage.
