Coconut Milk Yoghurt
Coco yoghurt is manufactured from 50% undiluted coconut milk and 50% non-fat dry milk. The standard formulation and process of yoghurt manufacture was modified by substituting coconut milk for cow’s milk formulation. The product is comparable with the yoghurt made of 100% cow’s milk. The product is still acceptable even after 5 days storage at 10 ºC.
