Modified Atmosphere Storage of Fresh Culinary Herbs
The modified atmosphere storage system can be applied to culinary herbs such as Vietnamese basil, lemongrass, and pandan which have short shelf life and are highly perishable. The herbs are placed in polyethylene bags (PEB) to double their shelf life. The cut stems or leaves are also immersed in water to prolong the keeping quality of herbs. The herbs under MA can be stored in low temperature to slightly extend the storage life and avoid chilling injury.
