Control of Browning in Minimally Processed Young Coconut
Dipping peeled young coconut (outer green husked removed) in sodium metabisulfite solution (SMS) prevents browning, an important consideration in marketing. Studies on optimization of handling technologies for young coconut confirmed that 10% SMS solution effectively controlled husk browning. However, for health and safety considerations, 5% SMS solution is now recommended. The 5% SMS treated nuts can be kept white and with no visible mold growth for 3-4 weeks at 7-10 °C and for 5-7 days at ordinary room temperature. Young coconuts (6-7 months old) must be harvested carefully to prevent any injury.
