Microbial Protease for Food, Feed and Other Industries
This technology is for the large-scale production of microbial protease intended for various applications in major industries. The resulting protease products increase feed digestibility and improved animal performance. For the bread industry, the protease induces softening action on doughs, cuts mixing time, increases extensibility of doughs and improves grain, texture and loaf volume. The protease can be used for the extraction process of coconut oil from freshly grated coconut meat which results to low energy consumption and extremely good quality oil. The proteases can also be utilized in the enzymatic extraction of fish oils, which are rich sources of omega-3-fatty acid, a promising pharmaceutical product.
