Local Production of Industrial Enzymes
Different industrially important enzymes are produced in small-scale quantities, including the following: alpha-amylase - used for high glucose/fructose syrup and maltodextrin production, to improve dough quality and as feed additive; cellulase - used in ethanol production, essential oil extraction and as feed additive for livestock and poultry, glucoamylase - used to convert starchy materials such as cassava, corn, and sweet potato into maltodextrin and glucose syrup; pectinase - used in juice and wine clarification and essential oil extraction; protease - used to improve bread quality, as feed additive to improve growth performance of swine and poultry, and an additive for detergent; and xylanase - used as animal feed additives and for improved cleaning ability of detergents.
