White Soft Cheese with ‘Nata De Coco’ as Dietary Fiber Supplement
The method for making white soft cheese was modified to include ‘nata de coco’ as a dietary supplement to add therapeutic value to the product. Two or 4% ‘nata’ can be added without a decrease in the fat and protein contents of the cheese. Adding ‘nata’ to the milk increases moisture, salt and yield and gives the cheese softer body and smoother texture.
