Honey in Milk Candy Making
In milk candy making, honey is used as the sweetener and flavoring in combination with table sugar at the rate of 5% honey and 2.5% sugar or 2.5% honey and 5% sugar. Aside from giving flavor, the honey also improves keeping quality of the milk candies.
